For today’s Geo Quiz, we’re looking for Vietnam’s second largest city. At one time, it was the capital of North Vietnam, but now it’s the capital of the entire country. This is an old city… really old.

It was founded in the year 1010. Later this year it holds a millennium celebration. This city’s name has changed a few times in the past 1,000.

Its name once meant “Ascending Dragon.” Now it means “The city within the river.” This city’s known for its mix of European and Asian style and architecture.

That mix is also reflected in its cuisine.

We’ll hear from a chef there who prepares dishes for global palates. But first, can you name this Vietnamese city in the north?

OK, you’re out of time. The city we’re looking for is Hanoi.

One of its upscale eateries is Restaurant Bobby Chinn. The head chef there is – you guessed it – Bobby Chinn.

Chinn was born in New Zealand, but his roots go back to Egypt and China. He trained in France and used to run a restaurant in San Francisco. This global chef has a few Vietnamese culinary tricks up his sleeve, though he says they haven’t all been easy to learn:

“I do a lot of global cuisine as well as modern Vietnamese cuisine and a lot of humility…”
